Cupcake Challenge Finished

MANGOLE' CUPCAKES


1Cup Butter (room temperature)

1 Cup granulated sugar

1 Egg

1 Egg yolk

1 Cup Milk

1 Tablespoon Hot Pepper Jelly (I used homemade, but you acn buy it at most groceries)

(Mix the previous two ingredients together)

1.25 Cups flour

1 teaspoon baking powder

1/2 teaspoon cayenne pepper

Pinch of Salt

(Sift the powdered ingredients together)

1 Fresh Mango, peeled and chopped (if you substitute frozen, thaw and drain well)



Preheat oven to 350 degrees

Cream butter with mixer on high speed

Add sugar and beat for 3 minutes

Add eggs, beat for another 45 seconds or so

Add alternately the flour mixture and the milk mixture, beating in about a 1/3 at a time

Fold in the mango pieces


Bake for 20 minutes- a toothpick should come out clean, but remember, these are MOIST and ovens vary!


ZIPPY CREAM CHEESE FROSTING


1 8 oz. brick of cream cheese

2 Tablespoons butter

3/4 Cup powdered sugar

Generous Pinch of cayenne

Teaspoon of hot pepper jelly


Beat together cheese, butter, cayenne and jelly

Add powdered sugar slowly

Refrigerate until good icing consistency


Color if you wish, pipe or spread on


Garnish with Dried Mangos with Chili Powder (available at Trader Joes or many Latino markets)
